Description
A white vine, with an aromatic bouquet characterized by elegance and complexity, in which exotic flavors are complemented by the unctuous-vanilla flavoured of the oak. The ending is intense and citric, keeping a long feeling of freshness.
- Appearance: Pale-straw yellow.
- Smell: Intense notes of tropical and citric fruits, surrounded by a shade of vanilla and butter generated by maturation in oak barrels.
- Taste: A full-bodied, complex, structured and well-balanced wine of a pleasant acidity.
- Serving: at 10-12 ° C, along with turkey or duck meat preparations, fatty pate of goose liver, fish or seafood accompanied by fatter sauces.
- Type of grape: Chardonnay.
- Type of wine: White and dry, DOC-CMD, Dealu Mare.
- Vol. Alc.: 14,6%.
- Production Area: Dealu Mare – Valea Calugaresca Vineyard.
- Region: Piedmont, calcareous area with southern orientation. Elevation 300 m.
- Winemaking: Harvesting was done manually in small crates weighing 7 kilos, after which grapes were then carefully selected on vibrant tables. The resulting must after leakage-pressing was gravitationally cleared.
- The controlled fermentation took place at a temperature of 16-18 ̊C. After the alcoholic fermentation has been completed, the wine has been kept on smooth sediment, in oak barrels for the first and second use, for 6 months, for extra complexity and aromatic extraction.
